Homemade Olive Garden Breadsticks

Ingredients

For the Breadsticks

  • 1 1/3 cups warm water
  • 1 1/2 teaspoons active dry yeast
  • 2 Tablespoons honey
  • 3 – 3 1/4 cups all-purpose flour
  • 1 1/2 teaspoons Diamond Crystal kosher salt
  • 3 Tablespoons avocado oil

For the Garlic Butter Topping

  • 4 Tablespoons salted butter
  • 2 cloves garlic, finely minced
  • 1/4 teaspoon dried oregano

Make and Proof the Dough

First, you’ll want to proof the yeast. In the bowl of a stand mixer, stir together the warm water, yeast, and honey. Let that rest for about 5 minutes, until the yeast gets foamy on top.

Add 1 ½ cups of the flour, the kosher salt, and the avocado oil, and mix on medium speed until it’s all combined.

Add another 1 ½ cups of flour and keep kneading. The dough should start to pull away from the sides of the bowl but still be a little sticky. Add the remaining ¼ cup of flour only if you need it. Knead the mixture for ~5-7 minutes.

Transfer the dough to a large, greased bowl, cover it with a dish towel, and let it rise until it has doubled in size, which should take about 1.5 hours.

Shape and Bake the Breadsticks

Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece of dough into a 9-inch rope and place them on a greased cookie sheet.

Cover the breadsticks with a dish towel and let them rise again for about an hour.

When you’re ready to bake, get your oven preheating to 425F.

Bake the breadsticks for ~10-12 minutes.

While they’re baking, melt the butter with the minced garlic and oregano in a small saucepan. As soon as the breadsticks come out of the oven, brush the tops with the garlic butter and move them to a wire cooling rack.

The key to these breadsticks is their super soft and fluffy texture, which comes from a simple, slightly enriched dough. They get a classic garlic-butter topping that’s brushed on right after they come out of the oven.

  • Add 1.5 cups more flour, knead 5-7 minutes until dough pulls from sides but remains slightly sticky. Add remaining 1/4 cup flour only if needed.
  • Transfer to greased bowl, cover with towel. Let rise 1.5 hours until doubled.
  • Divide dough into 12 pieces. Roll each into 9-inch rope. Place on greased baking sheet.
  • Cover with towel, let rise 1 hour.
  • Preheat oven to 425F.
  • Bake 10-12 minutes.
  • Melt butter with garlic and oregano. Brush over hot breadsticks.
  • Transfer to cooling rack.

Notes

Use warm water (105-110F) for proper yeast activation. Breadsticks are best served warm.
