Cinnamon Swirl Banana Bread

Ingredients

For the Brown Sugar Cinnamon Filling

  • 6 tablespoons dark brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon

For the Streusel

  • 1/3 cup organic cane sugar
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 cup unsalted butter, melted

For the Banana Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla bean paste
  • 1/3 cup full-fat Greek yogurt, room temperature
  • 1 1/4 cups mashed ripe bananas (about 3 medium)

Make the Toppings

First, get the cinnamon filling ready. In a small bowl, just whisk together the dark brown sugar, flour, and cinnamon. Set that aside.

For the streusel, whisk together the cane sugar, all-purpose flour, cinnamon, and cardamom in another bowl. Pour in the melted butter and mix it all up until the mixture looks like wet sand. Set that aside, too.

Make the Banana Bread Batter

Get your oven preheating to 350F and line a 9×5 inch loaf pan with parchment paper.

In a medium bowl, whisk together the 2 cups of all-purpose flour, baking soda, kosher salt, and cinnamon.

In a large bowl with a hand mixer, or in a stand mixer, beat the room-temperature butter and granulated sugar together on medium-high speed until the mixture is lighter in color and looks fluffy.

Add the eggs and vanilla bean paste and beat on medium speed until they’re just combined. Then, add the Greek yogurt and mashed bananas and beat again until everything is mixed.

Add the dry ingredients to the wet ingredients and beat on low speed until a batter just forms.

Assemble and Bake the Bread

Pour half of the batter into your prepared pan and sprinkle the cinnamon filling evenly over the top. Add the rest of the batter on top of that, and then sprinkle on the streusel.

Bake for 60-70 minutes. A toothpick stuck into the center should come out clean or with a few moist crumbs attached. I usually start checking it around the 45-minute mark since all ovens are a little different. If you see the streusel getting too brown, you can just lay a piece of foil loosely over the top.

Let the bread cool in the pan before you slice and serve it.

Instructions

  • Mix brown sugar, flour, and cinnamon for filling in small bowl.
  • Combine cane sugar, flour, cinnamon, and cardamom for streusel, stir in melted butter until mixture resembles wet sand.
  • Preheat oven to 350F and line 9×5 inch loaf pan with parchment.
  • Whisk flour, baking soda, salt, and cinnamon in medium bowl.
  • Beat butter and sugar until light and fluffy.
  • Mix in eggs and vanilla until just combined, then beat in yogurt and mashed bananas.
  • Fold dry ingredients into wet ingredients until just combined.
  • Pour half batter in pan, add cinnamon filling layer, top with remaining batter.
  • Sprinkle streusel over top.
  • Bake 60-70 minutes until toothpick comes out clean.
  • Cool completely in pan before slicing.

Notes

Cover with foil if streusel browns too quickly. Start checking doneness at 45 minutes.
