Garlic Parmesan Rolls

Ingredients

For the Rolls

  • 1 cup warm water
  • 1 package (2 1/4 teaspoons) active dry yeast
  • 2 teaspoons honey
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1 Tablespoon avocado oil
  • 2 – 2 1/2 cups all-purpose flour

For the Garlic Parmesan Spread

  • 6 Tablespoons unsalted butter, melted
  • 3 cloves garlic, finely minced
  • 1 teaspoon freshly chopped parsley
  • Drizzle of Extra Virgin Olive oil
  • 1/2 cup freshly grated Parmesan cheese, divided

Make and Proof the Dough

In the bowl of a stand mixer, stir together the warm water, honey, and yeast. Let that sit for about 10 minutes to get foamy.

Add the all-purpose flour, kosher salt, and avocado oil. Knead with the dough hook attachment for ~5-7 minutes, until the dough is smooth and elastic.

Cover the bowl and let the dough rise in a warm place for about an hour, or until it has doubled in volume.

Shape and Bake the Rolls

Turn the dough out onto a floured counter and roll it into a large rectangle, no more than 1/2-inch thick.

In a small bowl, mix together the melted butter, minced garlic, fresh parsley, and a little drizzle of olive oil.

Use a pastry brush to spread about half of this butter mixture over the dough. Sprinkle with a quarter cup of the grated Parmesan cheese.

Roll the dough up tightly into a log, starting from the long side, just like you would with cinnamon rolls. Use a sharp serrated knife to cut the log into pieces about 1 ½ inches thick.

Place the rolls on a greased baking sheet. Cover them with plastic wrap that’s been sprayed with a little cooking spray and let them rest for about 30 more minutes.

While they’re resting, get your oven preheating to 400F.

Bake the rolls for ~12-14 minutes. About 9 minutes into the bake, pull the rolls out of the oven and spread the rest of the butter and garlic mixture on top of them. Sprinkle with the remaining quarter cup of fresh Parmesan cheese, and then put them back in the oven for the last few minutes of baking.

This creates a swirl of savory filling in each roll, and you’ll brush more of that garlic butter on top halfway through baking to get them extra golden and flavorful.

  • Preheat oven to 400F.
  • Bake 9 minutes, remove and brush with remaining butter mixture and Parmesan.
  • Return to oven for 3-5 minutes until golden.

Notes

Best served warm and eaten same day.
