Homemade Bread Crumbs

Ingredients
- 1 loaf day-old crusty bread (like sourdough or ciabatta)
- 2-3 tablespoons olive oil (optional)
- 1 teaspoon dried Italian herbs (optional)
- 1/2 teaspoon garlic powder (optional)
- Diamond Crystal kosher salt, to taste (optional)
Make the Bread Crumbs
First, get your oven preheating to 300F.
Cut or tear your bread into rough cubes and spread them out on a baking sheet. If you’re making seasoned bread crumbs, now is the time to drizzle them with olive oil and toss them with the herbs, garlic powder, and a pinch of salt.
Bake for ~35 to 40 minutes. You’re looking for the bread to be completely dried out and lightly golden.
Let the toasted bread cool completely on the baking sheet.
Once it’s cool, you can add the pieces in batches to a food processor and pulse until they’re finely chopped, about the size of coarse sand.
You can use them right away or store them in an airtight container.
Homemade Bread Crumbs
The key to good homemade bread crumbs is using bread that’s a day or two old and has had a chance to dry out a bit. You can make them plain, or you can toss the bread with a little olive oil and some herbs before baking to make a seasoned version. - Pulse in food processor until finely ground like coarse sand.
