Homemade Bread Crumbs

The key to good homemade bread crumbs is using bread that's a day or two old and has had a chance to dry out a bit. You can make them plain, or you can toss the bread with a little olive oil and some herbs before baking to make a seasoned version. This is a super simple way to use up any leftover crusty bread you have lying around.

Ingredients

  • 1 loaf day-old crusty bread like sourdough or ciabatta
  • 2-3 tablespoons olive oil optional
  • 1 teaspoon dried Italian herbs optional
  • 1/2 teaspoon garlic powder optional
  • Diamond Crystal kosher salt optional, to taste

Instructions

  • Preheat oven to 300°F.
  • Cut bread into rough cubes and spread on baking sheet.
  • Drizzle with olive oil and toss with Italian herbs, garlic powder, and salt.
  • Bake 35-40 minutes until dried and lightly golden.
  • Cool completely on baking sheet.
  • Pulse in food processor until finely ground like coarse sand.

Notes

Store in airtight container. Use day-old crusty bread like sourdough or ciabatta for best results.
