Homemade Naan

Ingredients
For the Naan
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon granulated sugar
- 1/4 teaspoon ground coriander
- 1 teaspoon Diamond Crystal kosher salt
- 1/2 cup avocado oil
- 1 ¼ cup full-fat Greek yogurt
- 1/2 cup whole milk
For the Garlic Butter (Optional)
- 1 stick (1/2 cup) unsalted butter
- 5 cloves garlic, finely minced
Make and Proof the Dough
In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, granulated sugar, coriander, and kosher salt. Make a well in the center.
Pour the avocado oil and Greek yogurt into the well and start mixing with your hands. Slowly pour in the milk as you go, just until a soft dough forms. You might not need all of the milk.
Knead the dough for ~5 to 7 minutes until it’s smooth. Place it in a bowl, cover it with plastic wrap, and let it sit in a warm place for about an hour.
Shape and Cook the Naan
After the dough has rested, turn it out and form it into 12 equal-sized balls.
On a lightly floured surface, roll each dough ball out into an oval shape. Before you cook each one, brush one side with a little water.
Get a large skillet preheating over medium-high heat. Place the water-brushed side of the naan down in the hot pan and cook for ~1 to 2 minutes.
Now for the fun part. Flip the entire pan over and hold it over the open flame of your burner to roast the other side until it’s browned and charred in spots.
Repeat this with the rest of the dough, keeping the finished naan warm.
If you’re making the garlic butter, just melt the butter and garlic together in a small pot over medium heat for about 2 minutes, until the garlic is fragrant. Brush it over the warm naan before serving.

- 5 cloves garlic finely minced
Instructions
- Whisk flour, baking soda, baking powder, sugar, coriander, and salt in large bowl. Make well in center.
- Add oil and yogurt to well, mix with hands while gradually adding milk until soft dough forms.
- Knead 5-7 minutes until smooth. Cover with plastic wrap and let rest in warm place for 1 hour.
- Divide dough into 12 equal balls.
- Roll each ball into oval shape on floured surface. Brush one side with water.
- Heat large skillet over medium-high heat. Place naan water-side down, cook 1-2 minutes.
- Flip pan over open flame until second side chars (or flip and continue cooking in pan).
- Melt butter with minced garlic over medium heat for 2 minutes until fragrant.
- Brush warm naan with garlic butter before serving.
