Honey Dijon Poppy Seed Salad Dressing

Ingredients (~1.5 cups)
- 3/4 cup extra-virgin olive oil
- 1/2 cup apple cider vinegar
- 6 Tbsp honey
- 3 Tbsp Dijon mustard
- 1 1/2 Tbsp poppy seeds
- 3/4 tsp onion powder
- 3/4 tsp finely ground black pepper
- Heaping 1/4 tsp finely ground sea salt
Make the Dressing
Measure the olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, onion powder, black pepper, and salt into a medium-sized glass bowl or a large mason jar.
Whisk thoroughly (or seal the jar and shake vigorously) until the honey is fully dissolved and the dressing is emulsified.
Taste and add a pinch more salt or pepper if needed.
Store
Transfer to an airtight glass container or jar if you haven’t already.
Refrigerate until ready to use. This dressing will keep well for over a week in the fridge. Shake well before serving as the oil may separate or solidify slightly when cold.

Notes
Oil may solidify when cold; bring to room temperature or shake well before use.
