Honey Dijon Poppy Seed Salad Dressing

This versatile dressing hits every note: sweet honey, tangy cider vinegar, sharp Dijon, and the nutty crunch of poppy seeds. It works just as well on a simple green salad as it does as a dressing for coleslaw or pasta salad.

Ingredients

Ingredients (~1.5 cups)

  • 3/4 cup extra-virgin olive oil
  • 1/2 cup apple cider vinegar
  • 6 Tbsp honey
  • 3 Tbsp Dijon mustard
  • 1 1/2 Tbsp poppy seeds
  • 3/4 tsp onion powder
  • 3/4 tsp finely ground black pepper
  • Heaping 1/4 tsp finely ground sea salt

Instructions

  • Combine olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, onion powder, black pepper, and salt in a medium bowl or mason jar.
  • Whisk or shake vigorously until fully emulsified and honey is dissolved.
  • Taste and adjust seasoning if needed.
  • Transfer to an airtight glass container.
  • Refrigerate up to 1 week. Shake before serving.

Notes

Oil may solidify when cold; bring to room temperature or shake well before use.
