Oatmeal Chocolate Chip Cookie Bars

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 1/2 cups dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 2 tsp molasses
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups semi-sweet chocolate chips

Make the Cookie Bar Dough

First, preheat your oven to 350 F. Line an 8×8 inch pan with parchment paper, leaving some overhang on the sides to make it easy to lift the bars out later.

In a medium bowl, whisk together the flour, baking powder, baking soda, kosher salt, and ground cinnamon.

In a separate large bowl, vigorously whisk the melted butter with the dark brown sugar and granulated sugar for about a minute. The mixture should be completely combined and look like a thick paste.

Add the eggs, vanilla extract, and molasses and whisk until everything is combined.

Combine and Bake

Add the dry ingredients to the wet ingredients. Use a spatula to fold everything together until a dough forms, but you can still see a few streaks of flour.

Add the oats and fold until they’re fully incorporated. Then, add the chocolate chips and fold again until they’re evenly distributed and the last of the flour streaks are gone.

Pack the dough into your prepared pan in an even layer. You can top it with a few extra chocolate chips if you’d like.

Bake for ~25-30 minutes. The top will be a light golden brown.

Let the bars cool in the pan for at least ~20 minutes before you slice and serve them.

Oatmeal Chocolate Chip Cookie Bars

  • Press dough into prepared pan in even layer.
  • Bake 25-30 minutes until light golden brown.
  • Cool in pan 20 minutes before slicing.

Notes

Optional – sprinkle extra chocolate chips on top before baking.
