Oatmeal Chocolate Chip Cookie Bars

These bars are a straightforward take on an oatmeal chocolate chip cookie, but baked in a pan so you don't have to chill or scoop any dough. The batter is dense with oats and chocolate chips, and gets a warm, spiced flavor from cinnamon and a bit of molasses. They bake up incredibly soft and gooey, especially if you eat them while they're still a little warm.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1 cup unsalted butter 2 sticks, melted
  • 1 1/2 cups dark brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs at room temperature
  • 2 tsp vanilla extract
  • 2 tsp molasses
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F. Line 8x8 inch pan with parchment paper, leaving overhang.
  • Whisk flour, baking powder, baking soda, salt, and cinnamon in medium bowl.
  • Whisk melted butter with both sugars until paste-like consistency.
  • Add eggs, vanilla, and molasses to butter mixture; whisk until combined.
  • Fold dry ingredients into wet ingredients until almost combined.
  • Mix in oats, then fold in chocolate chips until evenly distributed.
  • Press dough into prepared pan in even layer.
  • Bake 25-30 minutes until light golden brown.
  • Cool in pan 20 minutes before slicing.

Notes

Optional - sprinkle extra chocolate chips on top before baking.
