S’mores Cookies

Ingredients

  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 1 cup dark brown sugar, packed
  • 1 large egg, at room temperature
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 cup milk chocolate chunks
  • 3 full graham cracker sheets, broken into small pieces
  • 10-12 large marshmallows

Make the Cookie Dough

First, preheat your oven to 350 F and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and kosher salt.

In a separate large bowl, whisk the melted butter and dark brown sugar together until they’re fully combined.

Whisk in the egg and vanilla extract.

Add the dry ingredients to the wet mixture and fold with a spatula until a dough forms.

Fold in the milk chocolate chunks and graham cracker pieces until they’re evenly distributed.

Assemble and Bake the Cookies

Take a scoop of dough and flatten it in your hand. Place a large marshmallow in the center and wrap the dough around it, rolling it into a ball and making sure the marshmallow is completely sealed inside.

Place the dough balls on your prepared baking sheet.

Bake for ~10-12 minutes, until the edges are set and slightly golden. The marshmallow in the center will puff up and might crack the top of the cookie, which is what you want.

Let the cookies cool on the baking sheet for a few minutes before moving them. They’re best eaten while they’re still warm and the marshmallow is gooey.
