S'mores Cookies

These cookies are a straightforward way to get s'mores flavor without a campfire. The dough is a simple brown sugar cookie base that gets loaded with milk chocolate chunks and crushed graham crackers. The key is wrapping the dough around a whole marshmallow; as it bakes, the marshmallow melts and puffs up, creating a gooey, melted center.

Ingredients

  • 3/4 cup unsalted butter 1 1/2 sticks, melted
  • 1 cup dark brown sugar packed
  • 1 large egg at room temperature
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 cup milk chocolate chunks
  • 3 full graham cracker sheets broken into small pieces
  • 10-12 large marshmallows

Instructions

  • Preheat oven to 350°F and line baking sheet with parchment paper.
  • Whisk flour, baking soda, and salt in medium bowl.
  • Mix melted butter and brown sugar in large bowl until combined.
  • Whisk in egg and vanilla extract.
  • Fold dry ingredients into wet mixture until dough forms.
  • Mix in chocolate chunks and graham cracker pieces.
  • Flatten scoop of dough, place marshmallow in center, wrap dough around completely.
  • Place dough balls on prepared baking sheet.
  • Bake 10-12 minutes until edges are golden and marshmallow puffs up.
  • Cool on baking sheet 5 minutes before moving.

Notes

Serve warm while marshmallow center is still gooey.
