Cheesy Garlic Breadsticks

The key to these breadsticks is a simple, slightly sticky pizza-style dough that bakes up soft and chewy. There's no complicated kneading involved; a stand mixer does most of the work. The dough is spread out right on the parchment paper it bakes on, which makes the whole process really straightforward. A generous layer of garlic butter and two kinds of cheese makes them savory and indulgent.

Ingredients

For the Dough

  • 3/4 cup warm water
  • 1 tsp granulated sugar
  • 1 1/8 tsp active dry yeast
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp distilled white vinegar
  • 2 cups bread flour

For the Topping

  • 2 tbsp unsalted butter melted
  • 2 cloves garlic minced
  • 1 tsp dried Italian seasoning
  • 1 pinch kosher salt
  • 1/3 cup grated Parmesan cheese
  • 1 1/4 cups shredded low-moisture mozzarella cheese

Instructions

  • Combine warm water, sugar, and yeast in stand mixer bowl. Let rest 5 minutes until foamy.
  • Add olive oil, salt, and vinegar to bowl.
  • Using dough hook, gradually mix in flour on low speed until smooth and elastic.
  • Cover and let rise in warm place for 1 hour.
  • Preheat oven to 475°F with pizza stone inside.
  • Press dough on parchment paper into 1/3-inch thick rectangle.
  • Mix melted butter, garlic, Italian seasoning, and salt.
  • Spread butter mixture over dough to edges.
  • Top with Parmesan, then mozzarella.
  • Slide parchment onto hot stone.
  • Bake 8-12 minutes until cheese is golden and bubbly.
  • Cool 1 minute before slicing.

Notes

If no pizza stone, use preheated baking sheet. Dough should be slightly sticky but not stick to clean finger.
