Chocolate Peanut Butter Granola Bars

These are simple, no-bake granola bars held together with a peanut butter and honey base. They're loaded with oats and chopped dark chocolate, with a solid layer of chocolate on the bottom that provides a nice snap. The key is to pack the oat mixture down firmly in the pan; this pressure is what helps them solidify into dense, chewy bars that don't fall apart.

Ingredients

  • 2 1/2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/2 cup chopped dark chocolate
  • 8 oz semi-sweet chocolate
  • 2 tbsp coconut oil

Instructions

  • Line 8x8 inch pan with parchment paper, leaving overhang on sides.
  • Whisk peanut butter, honey, and vanilla extract until smooth.
  • Mix in oats and salt until fully combined, then fold in chopped dark chocolate.
  • Press mixture into prepared pan using parchment paper to create firm, even layer.
  • Microwave semi-sweet chocolate and coconut oil in 30-second intervals until melted and smooth.
  • Pour melted chocolate over oat mixture, tilting pan to spread evenly.
  • Refrigerate until chocolate is completely set, about 30 minutes.
  • Lift from pan using parchment, flip chocolate-side down, and cut into bars.

Notes

Store bars in airtight container in refrigerator for up to 2 weeks.
