Snowy Eggnog Melt-Away Cookies

These buttery cookies practically melt in your mouth. They have a delicate texture and a sweet eggnog flavor enhanced by nutmeg and cinnamon. The sparkling sugar gives them a beautiful, snowy finish.

Ingredients

For the Melt-Away Cookies

  • 1 1/2 cups unsalted butter 3 sticks, softened
  • 1 cup + 2 Tbsp granulated sugar
  • 1 large egg + 1 large egg yolk
  • 1 Tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp baking powder
  • Heaping 1/4 tsp kosher salt
  • Heaping 1/4 tsp freshly ground nutmeg

For the Eggnog Icing

  • 1 1/2 cups powdered sugar
  • 3 Tbsp eggnog start with less and add more as needed
  • White sparkling sugar for topping

Instructions

  • Cream butter and sugar for 2 minutes until fluffy.
  • Add egg, egg yolk, and vanilla. Mix 30 seconds.
  • Whisk dry ingredients in separate bowl.
  • Add dry ingredients to wet in three batches. Mix on low until just combined.
  • Roll dough into 1-inch balls on parchment-lined sheets.
  • Flatten balls with glass bottom.
  • Bake at 375°F for 8 minutes until set but not browned.
  • Cool cookies completely on wire rack.
  • Whisk powdered sugar and eggnog for icing.
  • Adjust icing consistency with more sugar or eggnog.
  • Spoon icing onto cookies and sprinkle with sparkling sugar.
  • Let icing set before storing.

Notes

Cookies should remain pale and delicate.
